And a little more about us....
Laura Dahl (1956 - 2018)
While working in the forests of the PacificNorthwest as a young Forester, Laura fell in love with mushrooms. She was astonished with the many varieties of mushrooms in the woods and would fill her pockets for identifying. In the 1980’s when Shiitake mushrooms were new to the U.S. Laura and her husband David began growing them in a controlled environment on sterilized alder sawdust. At that time, spawn was not so readily available, and the Dahls often produced their own tissue culture. They were also involved with a study involving Oregon White Truffle inoculated Douglas fir seedlings.
In 2006, the Dahls moved to South Carolina. An abundance of oak trees rekindled an interest in cultivating mushrooms, where they preferred the quality of log grown mushrooms for fresh eating. The US mushroom industry was blossoming which encouraged the cultivation and year-round production of many varieties of shiitake, as well as a number of other species.
Cultivating came naturally for Laura, as both sides of her family were well versed with plant cultivation. Laura became a Master Gardener in THE original program in Marysville, WA. Laura was an avid gardener as well as expert mushroom cultivator, and conscientious steward of the environment. Laura said it well, “Seeing fertility increase through organic principles makes me feel an intimate connection with the earth.” Laura lived her life as a steward of Terra earth, supporting Slow Foods International, and growing her bountiful garden with sustainable practices and love.

I fell in love with gardening later in life. Having grown up on a farm under my grandmother's green thumb, one would think that I learned under her tutelage. Alas, I never paid the proper attention to the harvest, the canning, and certainly not to the healthy aspects of a fresh diet.
I was overweight for much of my youth and basically half of my life. I spent 10 years transitioning from 280 pounds to an appropriate body mass and size. From a somewhat slow moving me to an athletic me. It took a little longer for my mind's eye and my language to catch up to my new "image."
I was diagnosed with cancer in 2011 at a time when I thought I was healthy. I had just run a marathon, and I was thin and "fit" After being diagnosed, I delved into specific cancer-nutrition research and learned that the traditional FDA food pyramid may not be the best from a cancer prevention standpoint. I now practice a largely plant-based diet getting healthy nutrients from natural ingredients, many of which I grow. The research is compelling and there are many "superfoods" that I eat each day; Asian mushrooms are high on my daily intake list.
My cancer-fighting organic heirloom garden is filled with rainbow colored produce packed with super nutrients. I now have the privilege to share my garden, knowledge and experience with other cancer survivors. I come from a genetic history of unhealthy disease but my blood work is free of concern. Epi-genetics is the word that explains the layer of information that can override our genetic predispositions. The food we eat, the sleep we get, the stress we release, and the joy we feel all play an important part of our health.
I am 8.5 years cancer free!

History of Terra's Table
After Cheryl was diagnosed with breast cancer in 2011, Laura gave her a care package of fresh shiitake mushrooms, dried mushroom powder and the research of Dr. Joel Furhman on eating a diet full of antioxidant rich foods to fight disease. Mushrooms were among his recommended foods to eat daily for optimal health benefits. Together, they explored growing organic produce and preparing nutrient-dense meals. Cheryl began working with other cancer survivors and sharing Laura's medicinal (magical) mushroom powders with her clients. They later formed Terra's Table to produce Laura's mushroom powders to make them available to the cancer survivors who wanted them for everyday use. Unfortunately, Laura passed in 2018 from Terra Earth but continues to be the inspiration as Cheryl remains faithful to their mission of growing and producing healing foods and continuing the work of Terra's Table.
